Harvested at night to preserve the fruit flavors with the cold weather in the foothills of Palomar Mountain. Wine is macerated for two weeks to provide a balance with flavors and tannins. Also letting the fermentation temperature rise higher than usual to provide a deeper color and extract higher flavor components. Finally aged in oak barrels for a softening effect on the grape's naturally high tannins, bringing unique wood flavors and aroma.
